Chicken Dinner Recipe

A healthy chicken and asparagus dinner option


This is the chicken recipe I make in my college quad kitchen on a regular basis. It is a good source of protein, and I look forward to eating it every night. The chicken can be eaten on its own with a side of vegetables and rice, or I like to add it to a salad. I usually will eat it with asparagus and brown rice.


Ingredients needed:


  • 1-2 lbs of chicken breast tenderloins
  • Olive oil
  • Soy sauce
  • Salt
  • Pepper
  • Paprika
  • oregano
  • Garlic powder
  • Asparagus
  • Garlic cloves
  • A Lemon or lemon juice
  • butter

For the Chicken:


  1. Prepare your chicken by letting thaw in advance, and then wash it by rinsing the chicken with water. Trim off the fat and tendons if you wish.
  2. Season all of the chicken well with a layer of spices: salt, pepper, paprika, oregano, and garlic powder then flip the pieces over and coat the other side.
  3. Drizzle a bit of olive oil into a wok pan and let it heat up on the stovetop.
  4. Once heated, put as many pieces of chicken in the pan as you can fit, drizzle it with soy sauce, then let it cook on medium-high for about 2-3 minutes each side. I usually tear it apart with tongs to check if the chicken is still pink. If the chicken is medium brown the inside is white, it is done cooking.

For the Asparagus:


  1. Wash and trim the white ends of the asparagus off.
  2. Add a splash of water to a pan and let it heat up. Add your asparagus to the pan and let it cook at medium heat.
  3. Grate a lemon to add some flavoring to the asparagus, and add the lemon zest to the asparagus, and squeeze out the lemon juice. If you do not have a lemon, you can add a couple of drops of lemon juice.
  4. Mince a clove of garlic and add it to the pan for some flavoring.
  5. Sprinkle some salt and pepper on top of the asparagus and a slice of butter for more flavoring.
  6. Leave the pan uncovered and let the asparagus cook until it turns a brighter green color, and is slightly more tender. This will take about five minutes

You're all finished!

You now have a nice healthy chicken recipe to have for dinner that you can save in the refrigerator to reheat for a little over a week. I like to add some brown rice with the meal as well, and sometimes add some sweet and spicy Thai sauce to the chicken for more of a kick.
